BBQ Summer Salad

Here's a summer salad that has classic flavors the whole family will enjoy. With a homemade ranch dressing, and a summer must have BBQ chicken, no one will be disappointed. You can add a variety of herbs to your lettuce or summer vegetables to the mix. No matter what combination you create, you'll be making this salad for many BBQs.
BBQ Summer Salad
Serves 6 to 8
Ingredients:
1 pound chicken breasts
1/2 cup BBQ sauce
1/2 pound spiral noodles
1 1/2 cheddar cheese, cubed
3 cups romaine lettuce, shredded
1 cup cherry tomatoes, halved
1/2 cup fresh basil or cilantro, chopped
1 avocado, diced
Homemade Ranch
1/2 cup plain Greek yogurt
1/4 cup mayo
1 tablespoon buttermilk
2 tablespoons chopped chives
2 teaspoons fresh parsley
1 1/2 teaspoon dried dill
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper, to taste
Instructions:
Begin by brushing your BBQ sauce over each chicken breast. Cook over medium-high heat on a grill or skillet. Flip on both sides and keep cooking until the inside reaches 165F. Set aside and cover with foil.
Bring a pot of water to a boil and add your noodles. Cook according to package directions and drain.
In a medium bowl, combine your Homemade Ranch Ingredients. Taste and adjust seasonings accordingly.
Add all of your veggies and toppings to a large bowl (omitting avocado): cheddar cheese, romaine lettuce, cherry tomatoes, fresh basil or cilantro.
Slice your chicken into slices and add to your salad. Toss to combine all of the toppings.
Drizzle your dressing on top and toss again. Finish by adding your diced avocado. Serve right away!
