Cannoli Poke Cake

The goal of a poke cake is to get the moister distributed all of the way through the cake.


By using Sweetened Condensed Milk, the sweet flavor mixed with the creamy consistency bring a layer of deliciousness to every bite.


The homemade frosting is a must. It adds the inside of a traditional cannoli to the cake.


Chocolate chips and powdered sugar are optional, but is extra chocolate and sugar really ever a bad thing?

 

Cannoli Poke Cake

Serves 16

Ingredients:

  • 1 box white cake mix + ingredients to make

  • 1-14oz can sweetened condensed milk

  • 1 1/2 cup ricotta cheese

  • 1 1/2 cup mascarpone cheese

  • 1 teaspoon vanilla extract

  • 1 cup powdered sugar

  • mini chocolate chips + powdered sugar to top

Instructions:

  1. Prepare and bake your white cake mix as directed on your box. Let cool completely before moving on.

  2. Use the bottom of a spoon or spatula to make holes through out the cake.

  3. Reserve 1/2 cup of your sweetened condensed milk. Spread the remaining evenly throughout the holes/top of cake.

  4. Let your cake rest in the fridge for about 1 hour so the condensed milk can soak in.

  5. Use an electric mixer to combine your ricotta, mascarpone, 1/2 cup sweetened condensed milk, powdered sugar, and vanilla extract.

  6. Once your cake has absorbed the condensed milk, spread your Cannoli frosting over it.

  7. Top with chocolate chips and powdered sugar. Let sit in fridge for 2-4 hours or over night.
