Chicken Alfredo Bacon Potato Casserole

Who doesn't love a good casserole during these wintery Wisconsin months? They're warming, and they make the house smell so good while barely making dishes!


This is a twist to the classic "Tater Tot Casserole" which I am personally not a fan of. There are so many different flavor levels in this dish:

  • Smokey from the bacon

  • Salty from the potatoes

  • Garlic from the Alfredo

  • Nutty from the parmesan

It is definitely kid friendly - I know this because I liked it - and also reheats perfectly.

 

Chicken Alfredo Bacon Potato Casserole

makes 4-6 servings

Prep Time:

20 minutes

Cook Time:

50 minutes + 10 minutes resting

Total Time:

1 hour 20 minutes

Ingredients:

  • 6 slices bacon

  • 2 15-oz jars Alfredo Sauce (Roasted Garlic preferred)

  • 1/4 cup green onions chopped

  • 1 teaspoon garlic powder

  • 1/2 teaspoon ground mustard

  • 3 cups chicken cooked & shredded

  • 32 oz bag tater tots

  • parmesan cheese grated

Instructions:

  1. Preheat your oven to 375°F. Spray a 9x13 inch pan with cooking spray and set aside.

  2. In a large skillet, cook your bacon until crispy. Remove from heat and place on a paper towel lined plate. Cool for a few minutes and then chop.

  3. In a large bowl, mix together your Alfredo sauce, green onions, garlic powder, and ground mustard.

  4. Add your bacon, chicken, and tater tots to your Alfredo mixture. Toss to combine and make sure everything is covered with sauce.

  5. Spread into your prepared dish in one even layer. Top with parmesan cheese.

  6. Place into oven, uncovered, for 50 minutes.

  7. Once golden brown on the top and the sauce is bubbling, remove from oven and let stand for about 10 minutes.

  8. Serve up and top with additional bacon, green onions, parmesan or anything of your choosing
