Grapefruit Thyme Delight

This is a light summery drink that is easy to make in a larger batch!


If it isn't sweet enough for you, add a larger ratio of Thyme Simple Syrup to grapefruit juice or top with Sprite or 7Up instead of club soda.

 

Grapefruit Thyme Delight

Serves 2 | Total Time: 30 minutes


Ingredients:

  • 1/2 cup thyme

  • 1 cup water

  • 1 cup granulated sugar

  • 1 cup grapefruit juice

  • club soda, or sweet soda to reduce some bitterness

  • Grapefruit & Thyme to garnish


Instructions:

In a small saucepan, combine 1 cup water and 1 cup sugar over medium heat. Stir until the sugar is dissolved.


Add 1/2 cup thyme and bring to a low simmer. Stir occasionally for 10 minutes.


Leave the thyme hole so you can easily strain them out.


Remove the Thyme Simple Syrup from the heat and let cool for a minimum of 30 minutes. Strain the thyme out, leaving just the simple syrup.


If you're making two individual drinks, fill two cups with ice, a slice of grapefruit and a sprig of thyme. Add 1/2 cup grapefruit juice and 1 tablespoon of Thyme Simple Syrup to each glass. Top with a splash of club soda or sweet soda.


If you're making a batch, fill a pitcher with grapefruit juice and Thyme Simple Syrup (1 cup grapefruit juice = 2 tablespoons Thyme Simple Syrup). Refrigerate until ready to serve, and top individual servings with soda.
