Lemon Fluff Dessert {Lemon Stuff}

Throughout my family this is known as "Lemon Stuff", my all time favorite dessert. The first time I had it was up at my grandparent's camper. I was actually disappointed when I first heard what was for dessert {what can I say I'm a chocolate kinda gal}.


Well, it turned out to be so good I had my grandma get me a pencil and paper so I could write it down and give it to my mom to make for me. And she did! All. Summer. Long.


Now, it is a staple of summer for me. It's so easy for how good it is.


 

Lemon Fluff {Lemon Stuff}

Prep Time: 10 minutes

Setting Time: 3 hours

Total Time: 3 hours 10 minutes

Ingredients:

For Crust and Topping:

  • 4 cup Ritz crackers crushed

  • 1 1/2 cup butter melted

For the Filling:

  • 2 cans sweetened condensed milk 14oz

  • 1 12oz frozen lemonade partially thawed

  • 16 oz cool whip thawed

Instructions:

  1. Combine the crushed Ritz and melted butter in a bowl. Reserve 1/4-1/3 of the mixture to sprinkle on top. Spread the remaining on the bottom of a 9×13 pan. Press down to create the crust.

  2. In a large bowl, mix the lemonade with the sweetened condensed milk.

  3. Fold in the whipped cream – take your time to make sure it is all combined.

  4. Spread the lemon mixture over your Ritz cracker crust.

  5. Sprinkle the remaining Ritz mixture on top.

  6. Refrigerate for at least 2 hours. Cut up and enjoy.
