Parm & Garlic Smashed Taters

Smashed Potatoes are just so bite sized and cute. They give you the baked potato vibe in half the time! There are a few variations that you can make, but I'll let you think of those 😉

 

Parm & Garlic Smashed Taters

makes 4 servings

Ingredients:

  • 1 lb baby red potatoes scrubbed clean

  • 1/4 cup olive oil

  • garlic salt

  • pepper

  • 1/4 cup parmesan cheese

  • 1 tablespoon dried parsley

Instructions:

  1. Preheat oven to 425°F and line a large baking sheet with aluminum foil and spray with nonstick cooking spray.

  2. Begin by bringing a large pot of water to a boil. Add your scrubbed potatoes and cook for 20-25 minutes, or until soft when poked with a fork.

  3. Once soft, drain the potatoes. Place on your baking sheet and use the bottom of a cup to smoosh the potatoes to a 1/4 inch layer.

  4. Brush on half of your olive oil, and sprinkle generously with garlic salt and pepper. Bake for 15 minutes.

  5. Remove from oven, and brush on remaining olive oil. Sprinkle additional garlic salt and pepper. Place back in the oven for an additional 15 minutes, or until golden brown and crispy.

  6. Remove from oven. Combine your parmesan and dried parsley; sprinkle evenly over your smashed potatoes. Place in oven for 1 to 2 more minutes until the parmesan begins to crisp.

  7. Remove and serve with sour cream, chip dip, or any traditional baked potato toppings!
