Sweet Bacon Wrapped Pork Tenderloin

When you have a tenderloin in your freezer and it’s winter outside, you may have to pull out your crock pot. Slow cooking tenderloin is another way to keep it nice and juicy. The bacon helps bring the smoky grill flavor that we all love.
Sweet Bacon Wrapped Pork Tenderloin
serves 4
Ingredients:
1 -1 lb pork tenderloin, trimmed
3 tablespoons brown sugar
2 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon chili powder
8-10 slices bacon
1 tablespoon oil
2 tablespoons Dijon Mustard
Instructions:
Preheat your oven to 350°F. Position an oven rack in the middle.
In a small bowl, combine your brown sugar, salt, paprika, and chili powder. Rub into the trimmed pork tenderloin.
Lay out your bacon strips, slightly overlapping, on a cutting board. Place your tenderloin on top, and wrap each strip around. Secure with toothpicks.
In a cast iron skillet, or an oven safe skillet, sear your bacon wrapped tenderloin for about 4 minutes per side. The brown sugar will start to caramelize and burn a little, but this has the best flavor!
Once seared, remove from heat and generously brush on the Dijon mustard.
Place into your oven and bake for 12-15 minutes, or until the center reaches 140°F.
Remove the skillet from your oven and tent with aluminum foil. Let rest for about 15 minutes.
Transfer to a cutting board and slice into half inch pieces.
