Sweet Broccoli Stir Fry

Everyone loves a quick side dish that tastes as if it took forever to make. If you cook stir-fries often, chances are you have the needed ingredients already. That makes this a great last minute side to any meal!


Serve up with some fried rice and honey chicken!

 

Sweet Broccoli Stir Fry

serves 3 to 4 | Total Time: 15 minutes

Ingredients:

  • 2 tablespoons cornstarch

  • 3 tablespoons low-sodium soy sauce

  • 3/4 cup low-sodium vegetable broth or chicken broth

  • 1 tablespoon honey

  • 1 tablespoon sesame oil

  • 1 tablespoon vegetable oil

  • 5 cups broccoli florets, chopped into bite-size pieces and rinsed

  • 4 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon red chili pepper flakes, optional


Instructions:

1. Make your sauce: In a medium bowl, gently whisk 2 tablespoons cornstarch with 3 tablespoons soy sauce until the cornstarch is completely dissolved. Add the remaining liquid ingredients: 3/4 cup veggie broth, 1 tablespoon honey, and 1 tablespoon sesame oil. Set aside.


2. In a large frying pan, heat 1 tablespoon vegetable oil over medium-high heat.


The pan is hot enough if it sizzles as soon as you drop the broccoli in.


3. Add the 5 cups chopped broccoli, 4 minced garlic cloves, and 1 teaspoon ground ginger to the hot pan. Sauté for about 5 minutes, or until the broccoli begins to soften.


4. Whisk the sauce ingredients again. Then, slowly add sauce to the frying pan while constantly stirring. Continue to fry for another 4 to 5 minutes.


5. Once sauce is thickened and broccoli is tender, remove from heat and serve immediately. Sprinkle red pepper flakes on top and serve with rice!
